After some deliberations, I came up with a new recipe - Spicy Bean Duo!
Diced Tomatoes - 1 large can
Sweet Corn - 1 can
Black beans - 1 can
White/Navy beans - 1 can
Onions - 2 diced
Sambar powder - 3 Tbsp
Sesame seed oil - 3 Tbsp
Garnish: chopped curry leaves and cilantro
- In a sauce pan, heat-up the oil. Add the onions and brown them slightly.
- Add the sambar powder, beans, corn and tomatoes. Cover and cook on medium heat for 5 minutes.
- Add salt to taste and garnish with cilantro and the chopped curry leaves.
