Asparagus Tart
Amazing dish that my lovely wife made.
We used Puff Pastry dough to make the crust and layered tender asparagus on top.
Sprinkled a bunch of great tasting fresh Parmesan cheese (yes, you can use vegan cheese, if you prefer).
Simple to make. Tastes delicious.

Tofu Veggie Nedley
My recent creation - Tofu Veggie Medley. The thing I like most about this dish is that it is not only very nutritious and great tasting, but it is also very easy to fix.
It is very simple to make:
1. Stir-fry the tofu. I seasoned my tofu with cumin, garlic and ground black pepper.
2. Steam a pack of Oriental Mix vegetables (or your own selection, if you prefer).
3. Add salt to taste.
4. Add the veggies to the tofu mix
5. Serve hot with or without brown rice. I served mine on a bed of spinach, with some avocados.

Shake it up!
I have been trying to add a shake a day to my food intake. Sometimes I replace a meal with a shake and sometimes the shake is an addition - a treat.
One of my many experiments with shakes that turned out to be very delicious is the Orange-Kale-Banana-Ginger Shake. I use half-a-banana (instead of a whole one), 1 cup of Kale, 1 small piece of ginger root, 1 small orange, 1 small green apple, few ice cubes and some Almond milk, to make this shake. As usual, use your favorite blender to make the shake.

Chia Pudding
I have been taking Chia Seeds with my water for a while now. A couple of days ago, my dear wife made us this very tasty Chia Pudding. It is alleged that the benefits of Chia are phenomenal. This particular pudding tasted great too
